Ingredients
- 800 g smoked cucumber
- 1 onion
- 1 Garlic clove
- 150 g cooked ham (sliced)
- 2 tbsp butter
- 2 tbsp flour
- 400 ml milk
- 1 tsp seasoned broth
- 100 g whipping cream
- 2 tbsp mustard
- Salt
- pepper (ground)
- 1 packet of watercress
Instructions

Peel cucumbers, cut lengthwise into quarters, remove seeds and slice into about 0.5 cm thick rounds.

Peel onion and finely chop.

Slice ham into strips.

Sauté onions in hot butter until translucent, press garlic, add cucumbers and ham, cook over medium heat, then dust with flour and roast lightly to a pale yellow, pour in milk and 100 ml water while stirring, add broth, cover and simmer for 5 minutes.

Stir cream and mustard together, add to the cucumbers, warm through and season with salt and pepper.

Fold in watercress before serving.
