Greek Potato Slices

Ingredients

  • 250 g waxy potatoes
  • 200 g small violet potatoes (Vitelotte)
  • vegetable oil (for frying)
  • coarse Sea salt

Instructions

    Peel, wash, and slice the potatoes into very thin rounds or grate them with a vegetable peeler. Pat dry on kitchen paper. Heat the fat until it is hot enough that a wooden spoon placed in it produces small bubbles. Fry the chips in batches for 2-3 minutes until crisp. Remove the Greek potato slices, drain again on kitchen paper and season with salt.
