Fried Herring on Tomatoes

Ingredients

  • 4 large fresh herrings
  • ½ lemon juice
  • 750 g firm tomatoes
  • Salt
  • freshly ground pepper
  • 2 Garlic cloves
  • 2 onions
  • Basil
  • 6 tbsp Olive oil

Instructions

    Rinse the herrings, pat dry and drizzle with lemon juice.

    Wash the tomatoes and slice them. Place in a baking pan and season with salt and pepper.

    Peel and finely dice the garlic and onions. Rinse basil, shake dry and finely chop the leaves. Sprinkle 2/3 of the onions, garlic and basil over the tomatoes. Drizzle 3 tbsp olive oil on top.

    Make three shallow cuts about 1 cm deep on each side of every herring. Place the herrings on the tomatoes, season with salt and pepper. Scatter the remaining onions and garlic over them and drizzle with the leftover olive oil. Bake in a preheated oven at 200‑220°C (gas: level 4‑5, convection: 180‑200°C) for 25‑30 minutes.
