Anchovy Rolls with Tomatoes and Radicchio

Ingredients
- 8 double sardine fillets (ready-made)
- 0.5 radicchio
- 0.5 lemon juice
- 0.5 tsp Sea Salt
- 2 egg tomatoes
- Pepper (freshly ground)
- 2 tbsp olive oil
Instructions

Wash the sardine fillets, pat dry and place skin side down in a shallow dish. Drizzle with lemon juice and sprinkle with salt. Let sit for about 10 minutes. Then remove, season with pepper and drizzle with 1 tbsp olive oil.

Wash and trim the radicchio, cut into very thin strips. Lay them across the fillets and roll up.

Wash the tomatoes, optionally remove stems, slice lengthwise. Arrange on a plate, drizzle with remaining olive oil, season with salt and pepper, and place the sardine rolls on top.
