Herring with Potatoes and Onions

- 800 g new potatoes
- Salt
- 2 sprigs dill
- 8 green herring fillets (ready-to-cook about 80 g each)
- Pepper (freshly ground)
- 2 tbsp flour
- 2 tbsp butter
- 1 tsp plant oil
- 1 Red Onion
- 0.5 small leek stalk

Brush the potatoes thoroughly and cook in salted water for about 20 minutes. Wash the dill, shake off excess moisture, trim the tips, and chop finely.

Rinse the fish fillets, pat dry, and season with salt and pepper. Dust with flour and fry in hot fat in a pan, turning each side for 3-4 minutes until slowly golden brown. Drain on paper towels.

Peel the onion and cut into strips or cubes. Clean the leek, wash thoroughly, and slice into rings. Drain the potatoes, halve them, and mix with dill in a bowl. Arrange the fried herring on plates and sprinkle with the onion-leek mixture. Serve the dill-potatoes alongside.
