Ingredients
- 300 g cod fillet
- 300 g raw shrimp (pre‑shucked)
- 1 Green Chili Pepper
- 1 stalk Thai basil
- 50 g coconut flakes
- 1 tsp shrimp paste
- Salt
- Pepper
- 2 tsp brown sugar
- 12 sugarcane sticks
- oil for frying
- 1 bottle sweet chili sauce

1. Roughly chop the cod fillet and combine with the shrimp in a food processor to make a fine puree.

2. Wash the basil, remove it from the stalk and roughly chop. Slice the chili pepper lengthwise, deseed, peel off the white membrane and dice finely; mix with the remaining ingredients.

3. Divide the dough into 12 portions and shape each into an oval disc. Place a stick in the center of each disc, fold the edges over the stick, press firmly and smooth the seam with wet hands.

4. Fry the sticks in plenty of hot oil for 3‑5 minutes until golden; drain on paper towels and serve hot with sweet chili sauce.
