Calamari Skewers with Vegetables

Ingredients
- 4 Calamari (pre‑cooked)
- 50 g oil‑pickled yellow bell peppers (skin removed)
- 1 Garlic clove
- 0.5 bunch coriander leaves (chopped)
- 1 chili pepper
- 2 Zucchini
- 4 tomatoes
- 6 tbsp Olive oil
- Sea salt

Skewer the calamari pieces.

Slice the peppers into strips, peel and finely chop the garlic, and finely chop the chili pepper. Sauté all together in 3 tbsp hot olive oil. Add the calamari skewers and cook while turning frequently. After about 4 minutes remove from heat, add coriander and season with salt. Let it rest to finish cooking.

Wash, trim, and slice the zucchini.

Wash, quarter, core, and dice the tomatoes.

Sauté zucchini slices in 3 tbsp oil for about 1 minute until golden brown. Flip and add tomato cubes. Cook for another minute. Then season with salt and serve on pre‑heated plates. Place the calamari skewers on top and serve.
