Fried Bananas in Rice Paper

Crispy fried bananas wrapped in delicate rice paper, a fresh fruit dish from Spoonsparrow.
Ingredients
- 4 bananas
- 1 large round sheet of rice paper
- 2 tbsp butter
- 2 carambolas
- 8 mint leaves
- 120 g sugar
- 3 tablespoons butter
- rice wine

Instructions

Cut the rice paper into 8 segments with a sharp knife and soak between damp kitchen towels.

Peel the bananas, slice them lengthwise, and wrap each half with a mint leaf in a rice paper triangle. Fry the prepared bananas in hot butter in a pan, turning occasionally until golden.

In a pan caramelize the sugar with butter until golden yellow, deglaze with a splash of rice wine. Slice the carambolas. Spoon the caramel sauce onto plates, arrange the bananas on top, and garnish with carambola slices and mint leaves.
