Try the delicious oat chocolate coins from Spoonsparrow!

Ingredients

  • 200 g soft yogurt butter (room temperature)
  • 20 g vanilla sugar (2 tsp)
  • 200 g sugar
  • 1 pinch salt
  • 1 egg
  • 250 g rolled oats
  • 1 tsp Baking powder
  • 150 g Whole wheat flour
  • 70 g chocolate shavings
  • 200 g dark chocolate couverture
  • 10 g cocoa powder (1 tbsp)

Instructions

    Whisk butter with vanilla sugar, sugar and a pinch of salt. Beat in the egg. Mix oats with baking powder, flour and chocolate shavings and add to the wet mixture. Combine until smooth.

    Shape dough into small balls, flatten slightly and place on parchment-lined tray with space between each. Bake in preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for 10–15 minutes until golden yellow.

    Remove cookies from oven and cool. Meanwhile chop couverture roughly and melt over a double boiler, then remove from heat.

    Dip cookies into melted chocolate and place on wire rack. Dust with cocoa powder and let set.
