Ingredients

  • 100 g rolled oats
  • 100 g ground hazelnuts
  • 60 g whole wheat flour
  • 1 tsp Baking powder
  • 1 pinch Cinnamon powder
  • 125 g softened butter
  • 60 g sugar
  • 60 g brown sugar
  • 1 pinch salt
  • 1 egg

Instructions

    Preheat the oven to 180°C (fan). Line two baking trays with parchment paper.

    Mix rolled oats, hazelnuts, flour, baking powder and cinnamon in a bowl. Beat the butter with both sugars using an electric mixer. Add the egg and whisk until frothy. Gradually fold in the oat mixture. The dough should be slightly sticky and firm.

    Drop spoonfuls of dough onto the trays, shaping them into balls with your hands and spacing them apart. Flatten each ball slightly. Bake for 12–15 minutes until golden brown.

    Transfer the still-hot cookies to a wire rack to cool completely.
