Ingredients

  • 2 Eggs
  • 200 g ground almonds (trimmed)
  • 200 g sugar
  • 2 drops bitter almond aroma
  • 2 tbsp powdered sugar (for dusting)
  • dark couverture chocolate (for decorating, if desired)

Instructions

    Separate the eggs. Beat the egg whites into stiff peaks. Mix in the remaining ingredients and yolk, then fold under the meringue. Spread the mixture finger-thick onto a baking sheet lined with parchment paper. Bake in the oven at 100°C (fan 75°C) for about 2 to 2½ hours until dry.

    Let cool and cut into diamond shapes (about 9 x 5 cm) with a large knife. Dust with powdered sugar. Optionally decorate one diamond with couverture chocolate melted in a bain-marie, e.g., shaped like a musical note.
