Ingredients
- 2 Eggs
- 1 Shallot
- 2 handfuls fresh herbs (chives, parsley, cress, tarragon, borage, sorrel, pimpinella)
- 3 Tbsp plant oil
- 1 tsp sharp mustard
- 150 g Yogurt (3.5% fat)
- 250 g sour cream (10% fat)
- Lemon juice
- Salt
- ground pepper
Instructions

Hard boil the eggs, cool, peel and finely mash with a fork.

Peel the shallot and finely chop it. Wash the herbs, shake dry, pluck and finely chop them.

Whisk oil with shallot, mustard, yogurt and sour cream, then fold in egg and herbs. Season Frankfurter Green Sauce with lemon juice, salt and pepper.
