Fried Avocado Slices

Ingredients

  • 3 Avocados
  • 100 g spelt flour type 1050
  • Pepper
  • Salt
  • 1 egg
  • 100 g whole‑grain breadcrumbs
  • 1 tbsp Olive Oil
  • 1 sprig parsley

Instructions

    Halve the avocados, remove the pits, peel the halves and slice the flesh into rounds. Beat the egg in a small bowl with a pinch of salt and pepper.

    Coat each avocado round first in spelt flour, then in the beaten egg, and finally in whole‑grain breadcrumbs. Heat olive oil in a pan and fry the slices until crisp on both sides.

    Finely chop fresh parsley if desired and garnish the fried avocado slices with it.
