Lentil Balls

The lentil balls from Spoonsparrow impress not only with their taste but are also full of nutrients and vitamins!

Ingredients

  • 250 g finely grated bulgur
  • 250 g red lentils
  • 1 bunch spring onions
  • 2 tbsp chopped parsley
  • 1 tbsp Tomato Paste
  • juice of one lemon
  • 2 tbsp oil (20 ml)
  • Salt
  • Pepper
  • Spicy chili powder (optional)
  • Salad leaves (for garnish)
  • Lemon slices (for garnish)

Instructions

    Wash lentils and bring to a boil in 750 ml water over medium heat. Cover and simmer for about 30 minutes. Once the lentils are cooked, turn off the heat, stir in the bulgur and let it rest for about 10 minutes.

    Wash and trim spring onions; finely slice the white and light green parts. Wash parsley, dry by shaking, and finely chop.

    Heat oil in a pan and sauté the spring onions over medium heat. Add tomato paste and cook briefly until fragrant. Remove from heat and stir into the bulgur-lentil mixture. Let cool, then add parsley and season with lemon juice, salt, pepper, and chili powder if desired.

    Shape small balls from the dough. Arrange the lentil balls on a plate with salad leaves and lemon slices for garnish.
