Ingredients

  • 300 g potatoes
  • 500 g Sweet potatoes
  • Salt
  • 150 g quinoa
  • 50 g dried cranberries
  • 1 onion
  • 3 tbsp olive oil
  • 0.5 tsp Curry Powder
  • 1 egg
  • Pepper

Instructions

    Wash, peel, and cut the potatoes and sweet potatoes into 2 cm pieces. Boil in salted water over medium heat for about 20 minutes until cooked. Rinse the quinoa in a sieve and cook according to package instructions in boiling water over low heat for about 15–20 minutes.

    Meanwhile, peel and finely dice the onion. Roughly chop the cranberries. Heat 1 tbsp oil in a pan and sauté the onion over medium heat for 2 minutes until translucent. Add the cranberries, deglaze with 20 ml water, remove from heat, and let it swell.

    Drain the potatoes and mash them. Add the quinoa and cranberry mixture, then mix in curry powder, egg, salt, and pepper to form a pliable dough. Shape about sixteen small patties by hand and fry them in a hot pan with 2 tbsp olive oil over medium heat for about 8 minutes on each side until golden brown.
