Forest Berry Panna Cotta

Ingredients
- 3 sheets gelatin
- 250 g mixed fresh forest berries (raspberries, red currants, blackberries)
- 1 vanilla pod
- 400 g whipping cream
- 100 g sugar
- 200 g frozen forest berries
- 1 tbsp powdered sugar
- fresh woodruff for garnish

Soak the gelatin in cold water. Wash and pat dry the fresh forest berries with paper towels. Split the vanilla pod and scrape out the seeds. Heat the vanilla seeds, cream and sugar in a saucepan over low heat and simmer gently for 10 minutes. Remove from heat and stir in the squeezed gelatin. Divide into glasses, let 50 g of fresh berries sink into the panna cotta and chill for at least 2 hours.

Meanwhile, slowly bring the frozen berries with powdered sugar to a gentle boil while stirring. Simmer about 5 minutes then allow to cool. Just before serving, layer the cooked berries on top of the panna cotta and distribute the remaining 200 g fresh berries over them. Garnish with woodruff.
