Ingredients

  • 150 g flour
  • 80 g sugar
  • 1 egg yolk
  • 1 pinch salt
  • 100 g cold butter
  • 1 egg
  • 50 g whipping cream
  • 2 tbsp rum
  • 0.25 tsp cinnamon
  • 350 g walnut kernels
  • flour (for the work surface)
  • butter (for the pan)

Instructions

  1. 1.

    Knead flour with 30 g sugar, egg yolk, salt and 80 g finely chopped butter. Shape dough into a ball and wrap in cling film; chill for 2 hours.

    Roll out dough and line the greased pan. Prick the base several times with a fork. Blind bake in preheated oven at 180°C (middle rack) for about 15 minutes.

    Whisk remaining sugar with egg and cream. Melt remaining butter, then stir in rum, cinnamon and walnuts into the egg mixture.

    Spread onto the base and bake for about 35 minutes until done. Let cool in pan.
