Ingredients

  • 200 g wheat starch
  • boiling water
  • 125 g chopped shrimp
  • 1 tsp freshly grated ginger
  • 1 tbsp Sesame oil
  • pepper (ground)
  • 1 tbsp onions or leeks finely sliced
  • Salt
  • 6 tbsp soy sauce
  • 4 tbsp wine vinegar

Instructions

    Mix wheat starch and water, adding small amounts while kneading to form a smooth, silky dough. Roll thinly, cut circles about 8–10 cm in diameter. Combine shrimp, ginger, sesame oil, pepper, onions or leeks, and salt; mix well. Place filling in the center of each circle. Fold the dough over, alternating seam sides into folds, press together, and place in a steamer basket. Heat a little water in a wok, add the steamer basket, cover, and steam on medium heat for about 10 minutes per batch.
