- 2 lime (juice)
- 250 ml light white wine
- 2 tsp freshly grated ginger
- 1 pinch saffron powder
- 4 ripe pears
- 2 tbsp honey

Peel the pears, use a melon baller to remove the core while leaving the stem attached, and immediately drizzle with lime juice. Dissolve the honey in 2 tbsp water, add saffron and ginger, and simmer for 1–2 minutes over low heat. Add the wine and pears, cover, and steam for about 10 minutes until the pears are tender but not falling apart, occasionally spooning the sauce over them.

Remove the pears and let cool. Reduce the sauce to a syrupy consistency by cooking it down to about half its volume, strain through a sieve, and allow to cool. Serve the pears drizzled with the syrup.
