Ingredients

  • 6 egg yolks
  • 200 g sugar
  • 250 ml very dry white wine
  • fruit (or berries)

Instructions

    Beat egg yolks and sugar in a metal bowl until creamy. Place the bowl over a simmering water bath (water should not boil, just below boiling point) and gradually add the wine while continuously whisking with a fork. Whisk until the cream is foamy and has doubled in volume.

    Prepare the fruit (wash, pat dry, optionally cut into small pieces) and layer it with the sabayon in four glasses. Chill for 1 hour before serving.
