Watermelon Jelly with Honey Melon Pearls

Ingredients

  • 6 sheets red gelatin
  • 700 g watermelon (seedless)
  • 60 g sugar
  • 1 tbsp Lemon Juice
  • apple juice (to top up)
  • 150 g honey melon flesh

Instructions

    Soak the gelatin in cold water.

    Cut the watermelon flesh into small cubes and puree half with sugar and lemon juice. Top up to 500 ml with apple juice, squeeze out excess liquid from the gelatin and warm 2 tbsp of the melon liquid in a pot. Add the remaining liquid, let the mixture thicken slightly, then mix in the remaining melon cubes and spoon into glasses. Refrigerate for 3 hours.

    Use a Parisienne to scoop small balls from the honey melon flesh and arrange on the jelly. Serve immediately.
