Ingredients

  • 4 pears (e.g., Williams Christ)
  • 375 ml white wine
  • zest of 1 lemon (unprocessed)
  • 1 cinnamon stick
  • 50 g sugar
  • 50 g chopped pistachios
  • 300 g raspberries
  • 1 packet vanilla sugar

Instructions

    Peel the pears, leaving the stems intact. Simmer the white wine with lemon zest, cinnamon stick, and sugar for 5 minutes.

    Add the pears to the simmering liquid and steam for 6-8 minutes; the pears should not fall apart.

    Remove the pears from the broth and reduce the liquid into a syrupy consistency. Brush the pears with the syrup and roll them in pistachios.

    Rinse the raspberries. Reserve some whole berries, then strain the rest through a sieve. Sweeten with vanilla sugar.

    Arrange the pears on a plate with raspberry sauce and garnish with remaining fresh raspberries. Serve immediately.
