Figs with Nut Cream Filling

Ingredients

  • 125 g Cashews
  • 2 tbsp Orange juice
  • 2 tbsp lemon juice
  • 2 tbsp honey
  • 0.5 tsp cinnamon
  • a pinch of salt
  • 8 ripe large figs
  • 1 handful mixed nuts (for garnish e.g., hazelnuts, walnuts, blanched almonds)

Instructions

    Soak the cashews in water for about 5 hours. Drain and rinse them, then blend with orange juice, lemon juice, honey, cinnamon, and salt until smooth; if too thick, add 1-2 tbsp water to reach desired consistency.

    Wash the figs, pat dry, and cut a cross on the top of each. Gently press them open and fill with the nut cream. Garnish with some nuts and serve.
