Fennel Shrimp Soup

A quick and delicious fennel shrimp soup perfect for a light lunch or dinner.

Ingredients

  • 1 bundle vegetable mirepoix
  • 1 head fennel
  • 0.5 Organic lemon
  • 1 tbsp Olive Oil
  • 500 ml vegetable broth
  • 8 pre-cooked shrimp
  • 2 stalks Parsley
  • Salt
  • ground pepper

Instructions

    Clean and wash the vegetable mirepoix; peel if necessary, then slice into thin julienne strips. Halve the fennel, remove the core, and slice into thin strips as well. Wash the lemon and cut into slices. Heat oil in a pot, sauté the prepared vegetables over medium heat.

    Add the broth and simmer for 15 minutes. After 10 minutes, add the shrimp and lemon slices to cook through. Meanwhile, wash, dry, and finely chop the parsley. Season the soup with salt and pepper, then sprinkle with chopped parsley before serving in bowls.
