Filet Steak
Simply irresistibly good: Try the spicy filet steak with salad from Spoonsparrow!
Ingredients
- 1 head Radicchio (large)
- 3 tbsp apple cider vinegar
- 1 tsp Honey
- 1 tsp Mustard
- 5 tbsp olive oil
- Salt
- Pepper
- 800 g beef filet steak (4 steaks)
- 2 tsp pitted black olives
- 2 tsp white peppercorns
- 4 piment berries
- 2 tbsp germinated oil
- Salt
- 1 Garlic clove

For the salad, clean, wash, dry and tear Radicchio into bite‑size pieces. For the vinaigrette whisk vinegar with honey, mustard, salt and pepper; finally fold in the oil.

Crush peppercorns and piment in a mortar. Sprinkle the mixture onto a board and turn the steaks in it, pressing firmly. Peel and quarter garlic. Heat oil in a pan, add garlic and fry until golden brown, then remove. Add steaks to the hot fat and sear 1 minute per side. Reduce heat and cook each side for about 2–4 minutes. Sprinkle with salt, remove from pan and rest wrapped in foil for 5–10 minutes.

Marinate Radicchio, arrange on rustic boards or a large plate, place one filet steak on top of each serving, and serve immediately.
