Fennel Apple Gratin

Ingredients
- 4 apples (Elstar)
- 200 ml white wine
- 2 tsp mustard seeds
- 1 tsp fennel seeds
- Salt
- 150 g Bergkäse (e.g., Südtiroler Stilfser)
- 1 bulb fennel
- 1 tbsp Hazelnuts

Wash the apples, halve them and hollow out the core with a melon baller. Simmer white wine with mustard seeds, fennel seeds and salt for 5 minutes. Steam apple halves in the wine broth until just cooked.

Lift the apples from the broth with a slotted spoon, place them in a baking dish. Pour some of the broth over them. Cut the Bergkäse into pieces and add to the apples. Briefly gratinate under a preheated grill until the cheese melts.

Clean, wash and finely chop the fennel. Chop hazelnuts. Sprinkle apples with fennel and hazelnuts before serving.
