Ingredients

  • 4 beef filet steaks (about 160-180 g each)
  • 1 Tbsp clarified butter
  • 500 g tomatoes
  • 1 bunch spring onions
  • 2 tbsp butter
  • 0.125 l red wine
  • 1 bunch parsley
  • Salt
  • ground pepper

Instructions

    Heat the tomatoes, cool them, peel, quarter, remove seeds, and chop the flesh. Clean the spring onions, wash them, slice into rings, and sauté in butter. Finely chop the parsley, mix it in, pour over with red wine, let simmer, add the tomatoes, season with salt and pepper.

    Season the steaks with salt and pepper, then sear each side in hot clarified butter for 2-3 minutes (longer or shorter to your preference), remove, wrap in foil, rest briefly, then plate, grind fresh ground pepper over them, and serve with the tomato-onion vegetable mixture.
