Ingredients

  • 6 figs
  • 2 tbsp vegan butter or margarine (15 g)
  • 2 tbsp date syrup
  • 500 ml almond drink (almond milk)
  • 500 ml soy drink (soy milk)
  • 150 g delicate oat flakes
  • 4 tbsp lupin flakes or quinoa flakes (15 g)
  • 0.5 tsp cinnamon
  • 3 tbsp walnut kernels (15 g)
  • 1 tbsp cocoa nibs (15 g)

Instructions

    Wash 4 figs and cut into cubes. Add 1 tbsp vegan butter to a pot and melt over low heat. Add fig cubes and simmer for 5 minutes. Then drizzle with date syrup and 2 tbsp water, and cook for another 3 minutes. Remove from heat and set aside.

    Bring almond and soy drinks to a boil in a pot. Stir in oat and lupin flakes, stirring regularly, and let thicken over low heat for about 15 minutes. Mix in cinnamon and remaining butter, then allow the porridge to cool slightly. Meanwhile wash the remaining figs and slice them thinly.

    Serve the porridge in bowls and top with sliced figs, fig compote, walnuts, and cocoa nibs.
