Ingredients

  • 4 large fresh figs
  • 8 fresh dates
  • 3 tbsp sugar
  • 0.5 orange (juice and grated zest)
  • 50 ml sweet dessert wine
  • 150 g whipping cream
  • 4 scoops vanilla ice cream
  • 100 g strawberry purée
  • strawberries
  • mint

Instructions

    Wash and pat dry the figs and dates. In a small pan, combine sugar with 1 tsp water and caramelize over medium heat until golden yellow; remove from heat and stir in orange zest, juice, and dessert wine. Return to heat and bring to a boil once.

    Place the figs and dates in an appropriate dish, pour the syrup over them, cover with foil, and bake in a preheated oven at 180°C (mid rack) for 25 minutes.

    Whip the cream until stiff.

    For serving, spread some strawberry purée on a plate, quarter the figs without cutting through, and arrange the dates on top. Add decorative scoops of ice cream and a dollop of whipped cream, then garnish with strawberries and mint as desired.
