Fast strawberry ice from Spoonsparrow: perfect for the impatient, as 2 hours in the freezer are enough!
Ingredients
- 350 g frozen strawberries
- 1 tbsp Lemon Juice
- 3 tbsp raw cane sugar powdered sugar
- 250 g yogurt (3.5% fat)
- 100 g chilled whipping cream
- 100 g mixed berries (e.g., strawberries, raspberries, blueberries)

Blend strawberries, lemon juice, powdered sugar and yogurt in a stand mixer or with an immersion blender. Whip the cream to stiff peaks with a hand mixer. Fold the whipped cream into the puree and spoon into small molds. Place in the freezer for at least 2 hours.

Wash and drain the remaining berries. Plate the fast strawberry ice on bowls and garnish with fresh berries.
