English Muffin with Scrambled Eggs, Sausage and Cheese

Ingredients

  • 400 g ground beef
  • 1 egg
  • 0.5 tsp sharp mustard
  • 5 Tbsp breadcrumbs
  • Salt
  • Pepper (freshly ground)
  • 150 g flour
  • 1 pinch sugar
  • 2 eggs (separated)
  • 220 ml milk
  • vegetable oil
  • 4 eggs
  • 2 tbsp butter
  • 4 slices cheddar

Instructions

    For the meat patties, mix the ground beef with the egg, mustard and breadcrumbs into a smooth dough, season with salt and pepper, then divide into four equal portions. Shape each into very flat patties.

    For the batter, whisk together flour, a pinch of salt, sugar, yolks and milk until smooth. Beat the whites with a pinch of salt until stiff and fold them into the batter.

    Heat a skillet with a little oil and pour 2–3 tbsp of batter to make thin pancakes. Cook each side until golden brown, then remove and keep warm in an oven at 80 °C on both top and bottom heat.

    Whisk the remaining eggs, season with salt and pepper, and pour into a hot skillet with melted butter. Stir with a spatula and cook as scrambled eggs.

    In another pan, heat 2 tbsp oil and brown the meat patties on both sides until golden.

    Spread the scrambled eggs over four pancakes, top each with a meat patty and a slice of cheese, then slide under the broiler for a short time. Place the remaining pancakes on top and serve immediately.
