English Beef Fillet Pie (Steak and Ale Pie)

- 500 g flour
- 250 g butter
- Salt
- 2 Eggs
- 100 g mushrooms
- 800 g beef fillet steak
- Salt
- Pepper
- 2 tbsp plant oil
- 3 sprigs thyme
- 2 tbsp flour
- 150 ml ale
- 1 egg yolk

Sift the flour into a bowl and create a well in the center. Add butter pieces, salt, eggs, and 2 tbsp water into the well; quickly knead, form a ball, wrap in cling film, and refrigerate for about 2 hours.

Clean the mushrooms and slice finely. Cut the beef into bite-sized pieces and season with salt and pepper. Brown the meat in hot oil in a pan all around. Remove thyme leaves and add them. Dust with flour, pour in ale, bring to a boil, season with salt and pepper, then let cool. The sauce should not be too runny; fold in the mushrooms.

Preheat the oven to 200°C (fan) or 400°F.

Roll out the dough and cut two circles or cut them from a template. One circle should be slightly larger to line the bottom of the pie tin. Fill with the meat mixture, place the dough lid on top, press the edges firmly together, and decorate with a pattern if desired.

Bake in the preheated oven for about 45 minutes until golden brown.
