These Russian pancakes are a perennial favorite. Try this recipe from Spoonsparrow!
Ingredients
- 150 g buckwheat flour
- 150 g double-grain flour (Type 550)
- 1 pinch salt
- 20 g yeast (½ cube)
- 300 ml lukewarm milk
- 2 tbsp liquid butter
- 2 Eggs
- butter fat for frying
- 200 g Sour Cream
- 400 g smoked salmon (thinly sliced)

Instructions

Separate the eggs. Mix the flours together. Dissolve the yeast in the milk, then stir in the liquid butter and salt with the flour mixture; cover and let rise in a warm place.

Beat the egg whites until stiff peaks form, then fold them into the dough before baking.

Heat some butter fat in a pan, drop spoonfuls of dough into it, flatten slightly, and cook until golden brown on both sides. Keep warm.

Serve with smoked salmon, caviar, and sour cream.
