Sweet Blinis

Sweets blinis from Spoonsparrow taste especially good as a fruity main dish or for breakfast.

Ingredients

  • 200 g Physalis (Cape gooseberries)
  • 3 blood oranges
  • ½ lemon juice and zest
  • 70 g sugar
  • Mark of 1 vanilla bean
  • 2 tbsp Cornstarch
  • 1 tsp dry yeast
  • 100 g buckwheat flour
  • 60 ml milk
  • 1 tbsp butter
  • 1 egg yolk
  • Salt
  • 1 tbsp sour cream
  • 2 tbsp oil
  • mint

Instructions

    Separate the Physalis from their husks, wash and halve them. Fillet the blood oranges and collect the juice. Bring orange juice, lemon juice and zest, 50 g sugar and vanilla mark to a boil. Whisk cornstarch with 2 tbsp water. Thicken the juice with it, add the Physalis and orange fillets, heat briefly, then let cool.

    Mix yeast with 30 ml lukewarm water, remaining sugar, flour and lukewarm milk. Cover and let rise for about 30 minutes. Melt butter. Stir in egg yolk, salt and sour cream into the dough.

    Drop portions of the dough into hot oil and bake small blinis for 8-12 seconds each. Serve with compote and mint.
