Buckwheat Blinis with Berries

Ingredients
- 150 g buckwheat flour
- 150 g all-purpose flour
- 1 pinch salt
- 20 g yeast
- 350 ml lukewarm milk
- 2 tbsp liquid butter
- 3 eggs
- butter for frying
- 400 g crème fraîche
- 2 tbsp powdered sugar
- 250 g mixed berries (e.g., raspberries, blackberries, strawberries, blueberries)
- chocolate chips or crumbs for sprinkling
Instructions

Separate the eggs. Mix the flours together. Dissolve the yeast in the milk and stir in the liquid butter, egg yolks, and salt into the flour mixture; cover and let rise in a warm place.

Beat the egg whites until stiff peaks form and fold them into the batter before baking.

Heat some butter in a pan, drop spoonfuls of dough, flatten slightly, and cook golden brown on both sides. Keep warm.

Sift powdered sugar into the crème fraîche and whisk well. Wash and dry the berries. Spoon about 1 tbsp crème fraîche onto each blini, garnish with 1–2 berries, sprinkle chocolate chips, and arrange on a platter for serving.
