Elsässer Apfelkuchen vom Blech

Ingredients
- 300 g flour
- 125 g sugar
- 0.5 tsp Salt
- 2 Eggs
- 125 g cold butter
- 1.5 kg apples
- 1 lemon (juice)
- 6 Eggs
- 300 ml whipping cream
- 150 ml milk
- 150 g crème fraîche
- 150 g brown sugar
- 3 tbsp vanilla sugar

Mix the flour with the sugar and salt, then press a well in the center. Beat the eggs into the well and add the cold butter in small pieces. Use a dough cutter to create small crumbs. Quickly knead into a smooth dough, wrap in cling film, and refrigerate for about 1 hour.

Meanwhile peel, quarter, core the apples and mix the apple pieces with lemon juice.

Preheat the oven to 180°C (350°F) with top and bottom heat. Roll the dough between two sheets of parchment paper to fit the baking sheet. Place on the sheet and remove the top paper. Trim straight edges and prickle the base several times with a fork. Arrange the apples, rounded side up, on top. Whisk together the eggs, whipping cream, milk, crème fraîche, brown sugar, and vanilla sugar. Pour over the apples and bake in the oven (second rack from bottom) for about 35 minutes.
