Egg Liqueur Pralines

Ingredients
- 250 ml egg liqueur
- 250 g whole milk chocolate
- 15 g glucose (pharmacy)
- 250 g whipping cream
- 600 g whole milk couverture
- 60 whole milk praline hollow spheres (30%)
- 1 praline grid

Chop the whole milk chocolate, place it in a bowl and add the glucose. Bring the cream to a boil and gradually stir it into the chocolate with a spatula, being careful not to incorporate too much air. Fill a piping bag with the egg liqueur and pipe about 1/3 of the praline hollow spheres with it. Then fill another piping bag with the chocolate mixture and top the spheres just below the rim. Leave overnight. Melt some of the whole milk couverture in a double boiler, let it cool slightly, then seal the spheres with a piping bag and allow them to set.

Crush the remaining couverture, melt it in a double boiler, and let it cool again. Dip each praline into the couverture using a praline fork, place them on a grid. Once the coating has set a little, gently roll the praline back and forth with the fork to create a decorative pattern. Let them set on parchment paper.
