Ingredients

  • 250 ml elderflower syrup
  • 2 tbsp lemon juice
  • 1 very fresh egg white

Instructions

    Mix the syrup with 250 ml water and lemon juice, then whisk the egg white thoroughly.

    Place the mixture in an ice cream maker to freeze until creamy or pour into a metal bowl and chill in the freezer for 3 hours, stirring vigorously with a fork every 20 minutes.

    Serve in cups garnished with elderflowers.
