Ingredients
- 2 tbsp aromatic tea leaves
- 3 egg yolks
- 100 g brown sugar
- 2 tbsp honey
- 40 ml rum
- 0.25 L whipping cream
- 4 mint sprigs
- powdered sugar (for dusting)
Instructions

Boil tea leaves with 1/8l water, steep for 5 minutes, strain through a sieve and squeeze out the liquid.

Beat egg yolks, brown sugar, and honey in a bowl over a hot water bath, letting it cool while stirring. Add tea and rum.
