Ingredients
- 3 egg yolks
- 150 ml milk
- 75 g honey
- 150 g Sour cream
- 150 ml whipping cream
- 1 tbsp fresh lavender buds (picked)

Whisk the egg yolks with milk and honey over a hot water bath until creamy, without boiling. Remove from heat and beat cold. Fold in the sour cream. Whip the cream stiffly and fold in the lavender buds. Finish in an ice cream maker or freeze in a shallow dish for about 4 hours, stirring occasionally.
