Ingredients

  • 2 handfuls elderflowers
  • 1 untreated lemon
  • 500 g sugar
  • 10 g citric acid (pharmacy)

Instructions

  1. 1.

Do not wash the elderflowers, just shake them out of their packaging. Rinse the lemon under hot water and slice it thinly. Bring 1 l of water to a gentle boil while stirring in the sugar, then simmer for about 10 minutes.

  2. 2.

Allow the mixture to cool, add the elderflowers and lemon slices, and transfer everything to a large pot. Cover and let steep for approximately two days.

  3. 3.

Before bottling, strain through cheesecloth and bring back to a boil with citric acid while stirring. Pour into prepared bottles and seal tightly.
