Black and Red Currant Juice

Ingredients

  • 1 kg red currants
  • 1 kg black currants
  • 200 g sugar
  • 2 tsp canning aid

Instructions

    Wash the currants gently, drain them.

  2. 2.

    Place the red and black berries separately in a large pot, crush with a potato masher. Add ½ liter of water each, bring to a boil and simmer over medium heat for 10 minutes.

    Lay a thin muslin cloth over a large sieve, pour the fruit into it, and collect the juice.

  4. 4.

    Boil the red and black juices together with 100 g sugar until sparkling, skim off foam. Stir in one teaspoon of canning aid (and alcohol if desired).

    While still hot, carefully fill cleaned bottles and seal immediately.
