Ingredients

  • 1.5 kg apples
  • 2 tsp grated orange zest
  • 0.5 cinnamon stick
  • 125 g elderberries
  • 500 g gelée sugar (2:1 per liter juice)

Instructions

    Wash apples, cut into small pieces and add to a pot with the orange zest and cinnamon stick. Pick elderberries from their clusters, rinse gently, add them, and pour enough water to just cover everything. Cover and simmer over medium heat until the apples break down, then let cool. Strain the mixture through a muslin-lined sieve into a bowl for about 3 hours.

    Weigh the juice, add sugar accordingly, and bring to a boil while stirring. Perform a gelling test; once confirmed, pour immediately into prepared jars. Seal jars tightly and invert them for about 20 minutes to cool, then turn upright and let rest.
