Ingredients
- 500 g Green Asparagus
- Salt
- 1 egg
- 1 handful mixed herbs (e.g., parsley, chives, cress)
- 4 tbsp white wine vinegar
- 2 tbsp linseed oil
- 2 tbsp mayonnaise
- Pepper

Step 1: Prepare all ingredients. Peel the lower third of the asparagus and cook the spears in salted water for about 10 minutes until just tender.

Step 2: Hard boil the egg for about 10 minutes. Shock, peel, and finely chop. Rinse the herbs, shake dry, pluck, and finely chop. Whisk together the vinegar, oil, and mayonnaise; season with salt and pepper. Add a little water if needed. Fold in the egg.

Step 3: Add the herbs, stir, and serve over drained asparagus.
