Ingredients

  • 1 l milk
  • 0.5 Vanilla bean
  • 1 lemon
  • 100 g sugar
  • 1 pinch salt
  • 150 g round grain rice
  • 50 g Pine nuts
  • 400 g melon
  • 1 tbsp butter
  • 50 g sugar
  • mint (for garnish)

Instructions

    Bring the milk with the split vanilla pod, lemon zest, sugar and salt to a boil. Add the rice and simmer gently for about 20 minutes; roast the pine nuts in between. Remove the vanilla pod and zest, then add the roasted pine nuts.

    Halve the melon, remove seeds, cut into wide strips and slices. Melt butter in a pan, add sugar and caramelize until brown. Add lemon juice and melon slices, toss briefly. Serve on deep plates, top with melon slices and pine nuts, garnish with mint leaves.
