Ingredients

  • 1 EL pumpkin seeds
  • 1 EL sunflower seeds
  • 600 g green tomatoes
  • 600 g honeydew melon flesh
  • 2 EL balsamic vinegar
  • 1 EL lemon juice
  • 1 handful coarsely chopped coriander leaves
  • 1 TL liquid honey
  • 3 EL grape seed oil
  • 1 EL pumpkin seed oil
  • Salt
  • Pepper (freshly ground)

Instructions

    Lightly toast the pumpkin and sunflower seeds in a dry pan without fat. Let them cool and roughly chop.

    Wash, trim, and cut the tomatoes into strips. Cut the melon flesh into pieces. Combine both in a bowl with balsamic vinegar, lemon juice, coriander, honey, and both oils. Season with salt and pepper and distribute onto plates.

    Serve sprinkled with the seeds.
