Herring Salad with Raisins and Sour Cream

A fresh herring salad featuring potatoes, green onions, apples, raisins, sour cream, yogurt, horseradish, white wine vinegar, sunflower oil, salt, pepper, and parsley. Enjoy this dish from Spoonsparrow!
Ingredients
- 4 potatoes (mostly waxy)
- 6 pickled herring fillets (Bismarck herrings)
- 1 stalk of leeks
- 1 apple
- Lemon juice
- 2 tbsp raisins
- 250 g sour cream
- 150 g plain yogurt
- 2 tsp horseradish
- 3 tbsp white wine vinegar
- 3 tbsp sunflower oil
- Salt
- Pepper (freshly ground)
- 3 sprigs parsley
Instructions

Cook the potatoes for about 20 minutes, peel, cool, and dice.

Drain the herring fillets and cut into bite-sized pieces.

Wash the leeks and slice into thin rings.

Peel the apple, cube it, and drizzle with a little lemon juice.

Rinse the raisins briefly in hot water and drain.

For the dressing whisk sour cream, yogurt, horseradish, vinegar, and oil; season well with salt and pepper, then finish with a splash of lemon juice.

Serve the dressing on each plate, combine all salad ingredients, arrange over the dressing, and garnish with parsley sprigs.
