    Rinse the plums, pit them, and lay them out on a kitchen towel. Pat dry and spread on a baking sheet lined with parchment paper (or two sheets). Dry in an oven set to 50°C fan‑forced for about 6 hours, leaving the door slightly ajar (place a wooden spoon between the hinges). Turn occasionally during drying. The drying process can vary greatly and may take much longer depending on plum variety and size (often overnight). When the fruits are completely dry and feel leathery, they’re ready.
