- 1 Egg white
Instructions
-
1.
Lay the pastry sheets side by side on a work surface, cover with a damp kitchen towel and let thaw.
-
2.
Add couscous to a large bowl, pour about 100 ml boiling water over it, and let stand for 10 minutes to absorb.
-
3.
Meanwhile, pit the dates and roughly chop them.
-
4.
Roast the chopped almonds in a non‑stick pan without oil until golden brown.
-
5.
Combine dates, almonds, honey, butter, star anise, and cinnamon with the couscous and mix well.
-
6.
Separate the egg; lightly whisk the egg white in a small bowl (reserve yolk for another use) and brush the pastry edges with it.
-
7.
Spoon 2 tbsp of couscous onto each pastry sheet. Roll up the sheets and fold the sides inward. Line a baking tray with parchment paper, place the rolls on it, and bake in a preheated oven at 200 °C (180 °C fan, gas level 3) for 15 minutes.
