Ingredients
- 8 slices sunflower bread
- 2 tbsp butter
- 50 g arugula
- 1 Avocado
- 1 tbsp Lemon Juice
- 3 tomatoes
- 200 g mozzarella (sliced or fresh cheese slices)
- Salt
- Pepper
Instructions

Spread butter on 4 slices of bread. Wash, rinse and shake dry the arugula. Halve the avocado, remove the pit and slice into rounds. Drizzle with lemon juice. Wash the tomatoes, cut off the stem and slice thinly.

Place half the arugula on the 4 buttered bread slices and top with tomato slices. Add mozzarella slices, season with salt and pepper. Top with avocado slices and remaining arugula. Cover each with another slice of bread and serve.
